For those living in Milwaukee, or the surrounding areas, may have seen the construction of the new Potawatomi Hotel and Casino’s hotel in the past couple of months. We had the pleasure of being a part of the widely anticipated grand hotel preview last night. The launch party included tours of the hotel and presidential suite, aerial acrobatics, unique drinks, an all female group of violinists, and tables upon tables of sweet and savory gourmet food. That’s where our ice came into play! In collaboration with Chef Seth VanderLaan, our ice sculpture functioned as an infuser for a specialized sashimi sauce that was poured on pieces of fresh tuna. Different fruits were held in one chamber as the sauce was poured through the top and settled into a second chamber connecting to a spigot in the front allowing control over the amount of sauce amounting to the perfected tuna dish. Many thanks to Chef Seth for another wonderful collaborative experiance, it is always, without a doubt, a blast! Hope everyone that attended enjoyed the sashimi as much as we did!
